The global sorbic acid market is growing at a CAGR of around 2-3%. Sorbic acid and its mineral salts are principally used in foods and beverages as anti-fungal agents against molds and yeasts. Its key characteristics of allowing bacterial growth, makes it a useful preservative to be used in cheese and cheese-based products. Sorbic acid is used in conjunction with sulphur dioxide in wine making. The sulphur dioxide enables conversion of sorbic acid to alcohol and thus negates the foul smell of ether. Natural preservatives have been used since long times, however; current demand from processed food and beverages is not met due to scarcity. This has prompted development of industrially manufactured chemical synthetic preservatives like sorbic acids.
