Carboxymethyl cellulose is widely used in the food industry as stabilizer, binder, thickener, and suspension agent. It is extensively used in ice creams production as a thickening agent, in bakery products to increase volume, and as a fat reducing agent in fried foods. Asia-Pacific and Europe are largest markets for carboxymethyl cellulose. The demand from these regions is driven by the huge food processing and pharmaceutical manufacturing industries. China and Japan in Asia-Pacific and Finland, Turkey, Netherlands, and Italy in Europe are the major CMC manufacturing countries that exports large quantities of CMC to the countries in North America and Rest of the World.
Purified grade CMC (99.5%) is used in food and beverages applications. The widely accepted U.S. Code of Federal Regulations (CFR), Title 21, Section 182.1745 has mentioned CMC as Generally Recognized as Safe (GRAS) substance for use as direct food additive. Guar gum poses threat to the overall CMC market. CMC can be effectively replaced by guar gum in majority of the applications. The green/natural label associated with guar gum is an added advantage for the product to substitute CMC in several applications. However, the current high price of guar gum is a major factor retraining the penetration.
