Sorbic acid and its salts (sorbates) are used as preservatives in food, feed, pharmaceuticals, cosmetics, and detergents. Preservation, primarily, aims to alter these influential conditions in order to hinder or retard the proliferation of the microbes and the enzymatic reactions. Its most common form available in the market is potassium sorbate. Sorbates are organic compounds used as food preservative. It is an unsaturated fatty acid known to have inhibitory effects against a wide spectrum of microorganisms including food-borne pathogens. They are easily soluble in water and show highest efficiency in the pH range of 4-6.5. Sorbates are used in extremely low concentrations of 0.025% in the finished food product. Other applications of sorbates include a wide range of products including animal feeds, pharmaceuticals, cosmetics, and packaging material.
